Coconut & Raisin Cookies
These Paleo Coconut and Raisin Cookies are soft in the middle, chewy on the edges and so so tasty! They are my absolute favourite grain free cookies and are so easy to make! They are Grain Free, Gluten Free, Dairy Free, and Specific Carbohydrate Diet Legal.
In my opinion raisin cookies get a bad rap, they are like the kid in gym class who always gets picked last when there is no one else left to choose. I will admit I never used to like them either, I mean why have raisin when you can have chocolate chip? But over time I have come to appreciate the delicious chewy texture and sweet flavour they add to any cookie.
After years of hard work and research (ie eating lots and lots of cookies) I consider myself quite the aficionado on the subject of grain free cookies and I can honestly say these are the best ones I have ever tasted. They are soft, slightly chewy and taste just as good freshly baked as they do after a few days on the counter or straight from the freezer. Even SA who is not a fan of raisins (and by not a fan I mean absolutely despises them) was caught with his hand in the cookie jar on more than one occasion. That being said, I’m sure these Paleo Coconut and Raisin Cookies would taste fantastic with chocolate chips so I may make half of the next batch with chocolate for SA and the other half with raisins for me.
Which brings me to the downside of this recipe; these cookies are incredibly fast and easy to make (under 20 minutes!), which poses a major problem for anyone, who like myself suffers from a serious sweet tooth and lack of self-control around a fresh batch of cookies.

Coconut & Raisin Cookies
Ingredients
- 1 egg
- 2 tbsp melted coconut oil or butter
- 1/3 cup honey
- 1 tsp vanilla extract
- 1 1/2 cups Almond Flour
- 2/3 cup shredded unsweetened coconut
- 1/4 tsp baking soda
- 1/3 cup raisins or chocolate chips
Instructions
- Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit)
- In a mixing bowl combine the egg, butter, honey and vanilla extract and beat well until the mixture becomes light and frothy
- Add in the almond flour, baking soda and shredded coconut and stir to combine then add in raisins
- Form the dough into balls approx 1 inch in size and place on a parchment paper lined baking sheet. Press on the dough to flatten each ball
- Bake for 10-12 minutes until golden
- Remove from the oven and serve. They can be stored in an airtight container for up to a week. Enjoy!
Delicious! Also good with chopped dates instead of raisins.
These are very creative products like splatoon 3 and I will try to make these.
These are wonderful. Sure wish I knew about them for the year I had to be gluten free. I cut down on the honey and made them smaller so I could have three instead of one for the 180 calories. They are a great change from a coconut macaroon and a lot more protein, too. I might have to have some for breakfast in the morning 🙂
Can applesauce be used instead of egg, as an egg replacement?

Tasty, not just left with a mouthful of ground nuts. The coconut gives a chewy macaroon texture and full of flavor. Never disappointed with your recipes.

Super easy and taste great! I doubled the recipe and added cinnamon on the first try and they were great. I plan to try adding some citrus zest next time out. Really good though.

Hi, thank you so much for this recipe. I just made a batch. I used rice flour instead of Almond flour and put in a few chocolate chips too. They are delicious. Next time I’m going to use craisins and white chocolate. Can’t wait 😁

Not sure if I missed it, but there are no liquids in this recipe… How does the mix hold together?
You are correct there is very little liquid in this recipe but it works! The egg acts as a binding agent and the melted coconut oil and runny honey provide enough moisture to hold everything together.
Just baked for quick bfast, really nice flavor ( I added about a half a teaspoon of salt). Was soft and chewy but not crumbly once they cooled, which Ive had a hard time with paleo cookies before
I’m so happy you liked them! This is my favourite paleo cookie recipe, you can play around with flavouring, adding in nuts or dried fruit as well.
Oatmeal raisin cookies were always my favorite as a child. I miss oatmeal in general so much now! I’ll have to try these!

Just put my second batch of these in the oven. I made the first batch 2 days ago, they were so good they all disappeared in less then a day!
Delicious recipe! Wonderful texture and super quick to throw together. I added a 1/2 tsp. of cinnamon and a 1/4 tsp. of allspice to make them kind of like oatmeal cookies, which I dearly miss. Thank you!
Thanks for a great recipe! I replaced the honey with 2 tbsp Yucan syrup and 5 Vanilla stevia drops and the raisins with 3 tbsp Carob chips since I’m on anti candida diet. It worked very well and they are very tasty (I guess they are less sweet than original recipe).
Hi Malin, I am so happy the recipe worked well with the modifications. These cookies aren’t overly sweet to begin with and from what I’ve read Yucan syrup is about 60-75% as sweet as honey so next time it might be worth adding an extra tbsp of Yucan syrup if you prefer them a touch sweeter.
