Mother’s Day Menu
Looking for a way to spoil the Mom in your life? Making a special meal for her is always a good option. We have put together a menu that we think any Mom will love. From Muffins and Waffles to Eggs Benedict and Salmon we have included a wide selection of dishes.

Starters
Start the meal with something light and fresh. Grapefruit bowls are a fun way to serve fruit salad and in this recipe the fruit salad is tossed in a delicious orange poppy seed dressing. For an easy drink these Strawberry & Orange Smoothies are a great option. They can be made in advance, contain just 5 ingredients and there is even a hidden veggie that no one will even realize is there.
Muffins are a great make ahead treat that you can prepare the day, or even two, before and simply arrange on a plate before serving. Banana, Almond Butter & Raspberry Muffin Bars are a fun spin on a muffin and they are super moist and loaded with flavour. For a savoury option, Zucchini & Bacon Egg Muffins are light and fluffy thanks to a very eggy batter. Make extra of both so that you can enjoy them throughout the rest of the week for breakfast.
Mains
Whether Mom is team pancake or waffle, we have included two great options that we think she would enjoy. Paleo Banana Pancakes are loaded with chunks of banana and delicious smothered in syrup. Or as a savoury option, the Ham & Chive Waffles can be made in advance and popped in the toaster to crisp up and they are delicious topped with a runny egg.
If your Mom is a vegetarian, this Greek Frittata is a great option! You can roast the veggies the night before and add the egg and bake before serving. For someone more decadent Mom will love these Salmon Cake Eggs Benedict with Lemon Hollandaise and Crispy Capers. They are truly restaurant quality and so tasty!
Two great “non breakfasty” options are Pistachio Crusted Salmon and Citrus, Fennel, Avocado & Shrimp Salad. Both are light dishes that can be enjoyed for brunch or lunch. Best of all both dishes take less than 30 minutes to make.
Desserts
Luscious Lemon Cream is a fun way to finish the meal! It is a lemony whip that is made with a vegetable and is great served with fresh fruit for dipping. Pistachio & Lemon Cake is dense and has a wonderful blend of tart lemon flavour and crunchy pistachios.
