Eggplant Bruschetta is a fun low carb spin on traditional bruschetta that uses grilled slices of eggplant in place of bread! The eggplant is grilled until tender and then topped with a garlicky cream and chopped tomatoes. For a crowd pleasing make ahead appetizer this Creamy Chicken, Spinach & Artichoke Dip hits all of the marks. It can be made 2 days in advance and quickly warmed before serving.
Salads
When it comes to salads for a BBQ there 2 salads are not only real crowd pleasers, but they can both be made a day in advance. The Honey Mustard Carrot Salad is loaded with shredded carrots, tossed in a creamy honey mustard dressing and topped with crunchy sunflower seeds, shallots and parsley. The Creamy Cauliflower Faux-Tato Salad is a low carb spin on classic creamy potato salad. You can roast the cauliflower 2 days in advance and toss everything together day of.
Everyone needs a go-to coleslaw recipe and this one not only tastes good, but is also Paleo & Whole30. If you are looking for a real stand out salad, this Grilled Zucchini & Asparagus Salad is a showstopper! You can grill the veggies the morning of and toss everything before serving.
Mains
These aren’t your average Ribs, they are a great alternative to your basic BBQ ribs. They are marinated in a delicious lemon, garlic and herb sauce, baked in the oven until fall apart tender and then quickly grilled until charred on the edges. You can bake the ribs a day or 2 in advance and then grill before serving. Looking for something a bit more fancy? These Beef skewers include chunks of fig which a wonderful touch of sweetness.
