This peach burrata salad is one of my absolute favorite ways to celebrate peach season and is incredibly delicious during the summer months. Full of a variety of tastes, textures, and colors, it’s every bit as tasty as it is vibrant. The tomatoes and onions soak in a sweet and savory olive oil sauce, which makes their flavor out-of-this-world. Then, we pair them with sweet peaches, creamy burrata, and fresh herbs. As a result, every bite is packed full of tastes and textures you’ll adore. Plus, there’s absolutely no cooking involved, making this recipe perfect for those days when it’s just too hot to turn on the stove. Prepare it in advance, and enjoy it on its own as a light, nutritious meal. Or, pair it with your favorite main courses as an appetizer or easy side dish! What Is Burrata 


Burrata is often confused with fresh mozzarella cheese, but the two are not the same! If you’re unfamiliar, burrata cheese is a type of soft, fresh, Italian cheese made with cow’s milk. It has an outer casing that is made of soft mozzarella. However, once you break the outer shell, the center is gooey, soft, and comprised of small curds of cream. The flavor is similar to mozzarella but is richer and sweeter, not unlike cream.

Ingredients You Need To Make This Burrata And Peach Salad


  • Fresh Tomatoes: Cherry tomatoes are best for this recipe. However, if you can’t find them, heirloom tomatoes or grape tomatoes will also work. Use a variety of colorful tomatoes for a beautiful presentation, and slice them in half width-wise before you begin. 
  • Red Onion: for extra tang and a subtle crunch. 
  • Fresh Basil: Use a sharp knife or herb scissors to shred your fresh basil leaves. 
  • Olive Oil: Use a good quality extra virgin olive oil to form the base of the marinade mixture, combining the ingredients and adding a rich, slightly peppery taste. If preferred, avocado oil will also work. 
  • Balsamic Vinegar: This balances some of the richness from the fats, adding a subtly sweet, tangy taste to the marinade. 
  • Honey: I use honey to add sweetness to the veggies and enhance the natural flavor of the peaches, creating a cohesive dish. If preferred, maple syrup will also work. Or, use hot honey for a subtle touch of heat. 
  • Seasonings: Maldon salt, black pepper, and dried oregano. 
  • Fresh Peaches: You’ll need two large, ripe peaches. For the best taste and texture look for peaches that are bright in color, free from bruises or discoloration, and give just slightly when squeezed. 
  • Fresh Burrata Cheese: Use one large ball of burrata for this salad. You can typically find this in the specialty cheese aisle of your local grocery store. 
  • Chives: for a subtle onion flavor. If you do not have chives you can garnish with chopped parsley or oregano.

 

How To Make This Burrata And Peach Salad


  1. In a large bowl, add the red onions, tomatoes, and basil. Then, in a separate, small bowl, whisk the olive oil, balsamic, honey, salt, pepper, and oregano until smooth. Pour the sauce over the tomato and onion mixture, and stir to ensure all the ingredients are well coated. Cover, and leave the ingredients to marinate for 1 hour at room temperature. 
  2. Slice the peaches into thin wedges. Then, add the peach slices to the bowl with the tomatoes, and stir to ensure they are coated in the sauce. 
  3. Arrange the tomatoes and peaches on a large serving platter. Break the burrata into 4-5 chunks, and arrange them on the platter before sprinkling the chopped chives and basil on top of the salad. Enjoy right away!

How Long To Leave The Tomatoes To Marinate


It’s important to allow your tomatoes to marinate for at least an hour. Otherwise, they won’t absorb the flavor of the sauce. However, you don’t want to let them marinate longer than 3-4 hours. Otherwise, they’re likely to become soft and mushy and won’t taste great. I recommend setting a timer to ensure you don’t forget about them!

 

What Types Of Peaches Are Best


You can use any type of peaches you like best and have on hand for this Burrata and Peaches Salad! They all have slightly different tastes and textures but taste just as great. The most common options include: 

  • Yellow Peaches: These are the most common peaches found in grocery stores. When ripe, they’re incredibly juicy and sweet with mild acidic notes that add a subtle tang.  
  • White Peaches: A variation of Asian tree peaches, white peaches are similar to yellow peaches in flavor but are even sweeter due to their lack of acidity. 
  • Donut Peaches: Flat and saucer-like in shape, these peaches resemble a donut, and are slightly less juicy than other varieties with a mild, sweet flavor. 
  • Nectarines: Free from the fuzzy skin found on other varieties, nectarines are a type of peach that are firmer in texture like apples, and have a sweet, honey-like taste. 

The common denominator is that all peaches are sweet. So, the best option comes down to just how sweet you prefer your salad and which texture you like best! 

 

What Can I Use In Place Of Peaches


Feel free to use any other stone fruit you like best. Cherries, plums, and apricots all work well. You can even use a combination of fresh fruit if you’re feeling creative. Just keep in mind that the taste and texture of your salad will change slightly, depending on what fruit you use. 

 

What To Serve With This Salad Burrata Salad


You can enjoy this Burrata and Peaches Salad on its own as a light meal with a side of fresh bread. Or, transform it into a filling main course by topping it with steak, chicken, or shrimp. I also like to enjoy it as a side or appetizer. It’s fantastic with protein-rich meals such as Roasted Butterflied Leg of Lamb, The BEST Grilled Chicken, Paleo Chicken Tenders, or Blackened Salmon. If you want to bulk your meal up even further, add a carb-rich side like rice, quinoa, or potatoes! 

 

 

Can I Make This In Advance


Yes, you can prepare the tomatoes and onions up to 4 hours in advance, leaving them to soak in the marinade. Then, assemble the ingredients as normal, and enjoy your peach and burrata cheese salad in a matter of minutes. Or, you can assemble the entire salad up to 30 minutes in advance. Serve it at room temperature, or transfer it to the fridge to chill until you’re ready to serve. 

What About Leftovers


Unfortunately, leftovers become quite liquidy after sitting in the fridge overnight, but they still have great flavor! I like to add them to a bed of greens like peppery arugula or spring mix for a heartier salad. Or, you can serve leftover peach and burrata cheese salad over crusty bread or toast drizzled with olive oil and balsamic glaze for a bruschetta-inspired snack or appetizer.

  • ½ cup very thinly sliced red onion and then cut in half into 1 inch pieces
