This Truffle Mayonnaise will quickly become your new favorite sauce. It takes just minutes to make with a handful of ingredients and is fantastic served with everything from french fries, sandwiches and burgers, to pizza, chicken and more!
I am such a truffle lover, and this Truffle Mayonnaise sauce has quickly become one of my new favorite things to make. I have been making this sauce regularly to elevate burgers, chicken sandwiches, fish, veggie dip, and of course, French fries, It takes less than 5 minutes to make with only a few simple ingredients including mayonnaise, garlic, lemon juice, salt, pepper and of course, truffle oil.

Ingredients You Need For This Truffle Mayonnaise
- Mayonnaise: I love using homemade classic mayonnaise for this, and it’s super simple to make. If you don’t want to make it, you can use a store-bought regular mayo too. I like to buy the ones that are made with avocado oil or extra virgin olive oil.
- Truffle oil: the key ingredient! I usually use white truffle oil for this recipe, but black truffle oil will also work (it has a strong earthy flavor). You can find more information below on the difference between the two.
- Fresh garlic: Using freshly chopped garlic cloves is my first choice to release all the delicious, garlicky flavor. You can also use minced garlic, or even a 1/4 teaspoon of garlic powder in a pinch.
- Lemon juice: Freshly squeezed lemon juice is best in my opinion, but you can use store-bought 100% lemon juice too. I like the balance of lemon juice with the truffle oil, but lemon zest can be used for a less acidic flavor.
- Seasoning: I use kosher salt or sea salt and freshly ground black pepper for a simple spice mixture.

What Type of Truffle Oil Should I Use?
The main difference between black truffle oil and white truffle oil lies in the type of fresh truffles used to infuse the oil, which will affect the flavor profile and aroma. These earthy mushrooms are of the highest quality in the mushroom world and are considered to be a luxurious delicacy with an amazing depth of flavor.
- Black truffles are earthier, more robust in flavor, and have a strong and pungent aroma. It is often used to make a black truffle sauce that is made with heavy cream and parmesan cheese.
- White truffles are lighter, more delicate and have a sweeter taste. The smell is less intense and has a more garlicky note to it. Again, it is used for a truffle cream sauce that is so unbelievably delicious for pasta, chicken, pork, or seafood.

How To Make This Simple Truffle Mayonnaise Recipe
Stir or whisk all of the ingredients together in a bowl until well-mixed. You can also mix everything in a food processor or with an immersion blender to get the perfect creamy texture. That’s it!
Ways To Modify This Truffle Mayonnaise Recipe
- Make your own mayo or buy store-bought, whichever you prefer. When I make mine, I use organic, free-range eggs. The results are fool-proof delicious with an amazing velvety texture.
- You can use white wine vinegar instead of the lemon juice for an acidic burst of flavor in this decadent dip.
- Use white truffle oil or black truffle oil, whichever you prefer, but black truffle oil will have a stronger, deeper umami flavor.
- Swap out the mayo for sour cream, plain greek yogurt, or plain dairy-free yogurt.
- If you really want to up the truffle flavor you can also add in truffle salt which has a saltier bold flavor. I recommend gradually adding small amounts (1/4 tsp) until it reaches your desired truffle level.
Dietary Customizations
- To make this truffle sauce recipe vegan I recommend using vegan mayonnaise. The results will still be flavorful, creamy, and decadent.
- You can also make your own vegan mayonnaise for a fraction of the price with oil, vinegar, milk, and lemon juice. Many of them are made with sunflower oil, so if you don’t want seed oil, you can use avocado oil or olive oil.
- If you have an allergy to garlic, you can leave the garlic out and you won’t even notice it.
Can I Make This Truffle Mayonnaise In Advance?
Yes! For best results, you will want to store it in a jar or an airtight container, and it can be made 3-4 days in advance. The flavors will meld and develop the longer it sits, so if you want to compensate for that, you might put in a little less truffle oil.
Ways To Use This Truffle Mayonnaise Sauce
The distinctive flavor of truffle oil can elevate some of your favorite dishes. Here are a few ideas for you:
- For a touch of luxury, you can use this dip for fries, whether they are regular fries or sweet potato fries.

What About Leftovers?
The leftovers of this truffle oil will be the perfect addition to future meals and will last 3-4 days when stored in the fridge. Because of the mayo’s egg yolk, storing it well in an airtight container is best to maintain freshness and prevent spoilage.
