Spicy Green Tomato Salsa
A delicious and spicy salsa made with Green Tomato! This recipe is perfect for canning or served with anything! This salsa is Vegan, Paleo, Grain Free, Gluten Free, and Specific Carbohydrate Diet Legal.
Salsa is one of my favourite condiments that I put on just about any dish. I normally make a fresh tomato salsa, but if you have an extra hour, this cooked version is definitely worth the effort, the flavours are much richer. If you have a garden at home with a crop of stubborn green tomatoes that just won’t ripen, this is a great recipe to try so they don’t go to waste. Alternatively a lot of vegetable markets at this time of year sell green tomatoes and if you aren’t able to find them you can always use red tomatoes which are still firm.
This green tomato salsa is completely fool proof and you can play around with the measurements of spices and seasonings to suit your taste. I love cumin so always add extra, but you can increase the amount of lime juice, cilantro or jalapenos as well.
The Green Tomato Salsa goes with absolutely anything. I love having it with scrambled eggs, on chicken or fish or on top of Mexican salads. It will last in the fridge for about a week, or alternatively to enjoy this salsa all year round you can can it in sterilized jars.

Spicy Green Tomato Salsa
Ingredients
- 5 cups green tomatoes or firm red tomatoes chopped
- 3 medium onions finely chopped
- 2 red or yellow bell peppers seeded and chopped into
- 1/3 cup jalapeños diced
- 5 cloves garlic crushed
- 1/4 cup lime juice
- 1 tsp honey or other sweetener*
- 2 tbsp cumin
- 1/4 tsp salt
- 1/2 cup fresh cilantro
- 1/2 cup white wine vinegar
- 1 tsp cayenne
Instructions
- Combine all of the above ingredients in a large pot on medium heat and cook for 45 minutes, stirring occasionally. Taste the salsa to make sure the flavours are to your liking, if not add more lime juice, cayenne or sweetener.
- The salsa will last for approximately a week in the fridge, or store in sterilized jars.

In general worked fine. A lot of tinkering of ingredients required- I in fact substituted verjus for lime juice and ACV for the vinegar (as I make these at home from organic home produce ). The result was edible but not majorly inspiring….

Love this recipe. It says it yields 6 jars. What size? Also, I see you mention “sterilized jars”… what process do you use to conserve and what is the shelf life?

Single batch yields 3 x 500ml mason jars plus 1 x 250ml jar and a bit extra OR 7 x 250 ml jars and a bit extra
Double batch yields exactly 15 x 250ml mason jars or 7 x 500 ml jars plus one 250ml
I followed standard canning instructions and did a 10 minute water bath.
We tried this recipe twice both as a single batch and double batch. We used mostly red tomatoes but a mix of both green and red and a mix of type of tomatoes (including cherry tomatoes). All heritage varieties from our garden.
The recipe was delicious and definitely a keeper!
We did not have white wine vinegar so we substituted for half apple cider vinegar and half white vinegar.
Can you use a combination of red and green tomatoes?
Could you make this and rather than canning it, could you just freeze in desired portions?
Yes you definitely can!
