Banana Bread Mug Cake
All you need is a handful of ingredients, a mug and a microwave to make this Paleo Banana Bread Mug Cake. This is the perfect 5 minute recipe for when you are craving Banana Bread but don’t have time to make a loaf! This Paleo Mug Cake is also Grain Free, Gluten Free, Dairy Free and Specific Carbohydrate Diet Legal.
I am so excited to share this recipe. I am a massive fan of banana bread and don’t want to brag, but think I have mastered the art of making the perfect loaf.
In my opinion the key is not overcooking the bread so that is remains super moist, and adding lots of banana so that it’s bursting with flavour.
While I try to always have a loaf of my banana bread in the freezer for a quick breakfast or snack, sometimes I’m just not that organized. So here is my solution, a super fast single serving banana bread recipe that requires just a mug and a microwave, it’s so easy.
One of the keys to making this Paleo Banana Bread Mug Cake really delicious is using a very ripe banana, the more black spots the more flavour the bread will have. Ripe bananas are much easier to digest then firmer green or yellow ones and also increase in antioxidant levels as they ripen. Depending on how sweet the banana you are using is, you can skip the honey in this recipe to cut down on the total amount of sugar.
I think this Paleo Mug Cake would be a big hit with kids as it’s exciting to watch the bread rise and cook so quickly in the microwave in just a few short minutes. I added walnuts to the bread for a bit of crunch, but you could substitute them for chocolate chips or raisins for added texture.

Banana Bread Mug Cake
Ingredients
- 1 1/2 tbsp coconut oil
- 1 very ripe banana
- 2 tbsp coconut flour
- 2 tbsp almond flour
- 1/4 tsp baking soda
- 2 drops apple cider vinegar
- 1/4 tsp vanilla extract
- 1 tsp honey or other sweetener
- 1 egg
- 2 tbsp chopped walnuts or chocolate chips
Instructions
- Put the coconut oil in the mug and microwave for 15-20 seconds until melted.
- Cut the peeled banana into chunks and place in the mug. Using a fork, mash it against the side of the mug until its blended into a puree.
- Add to the mug the coconut flour, almond flour and baking soda. When adding the apple cider vinegar try to ensure that it makes contact with the baking soda (the baking soda will fizz when it touches the apple cider)
- Add in the vanilla extract and egg and walnuts. Stir until well combined.
- Microwave the mug for 2 1/2 to 3 minutes or until the banana bread has risen and the top is fully cooked and no longer wet to the touch. Serve topped with chopped walnuts or banana chips.
I don’t have a microwave. Is it possible to do this in a toaster oven?

hi was wondering if i can use homemade oat flour instead? also is there a way to make without baking soda/baking powder? i have banana and steelcut oats i was told to pulse to make oat flour… honey and or organic cane sugar eggs i also have braggs acv…. thanks….
Exactly what I was looking for! Hit that spot on my sweet tooth. So moist! You could do without the honey, the banana makes it sweet enough! I drizzled a little Maple syrup on top with some more walnuts and I love it! Keeping this recipe!
not sure what Megan’s talkin bout, this was bomb. I used honey as a sweetener and added some choco chips. maybe it would be dry w/o them? Of course it wasn’t the dense, moist banana bread you bake in the oven but it was an awesome 5 min fix 🙂
This was really gross. It was very dry. I followed the recipe to a tee and used the sweetest ripest banana. I even added walnuts and chocolate chips and it was gross.
Saw this on Instagram today and had a banana I was about to toss but whipped this up instead! Not as tasty as my mom’s banana bread but I was so impressed given it’s a microwave mug cake. Would make again! Used brown sugar for sweetener. Used walnuts but will try chocolate chips next time. Would be so good with a scoop of vanilla ice cream.
This is the best mug cake I’ve tried! I made it vegan by using a flax egg and lakanto sugar free maple syrup instead of the honey! Also added paleo caramel on top! Thank you so much 😍😍

I haven’t tried but you could try using a different nut flour or cassava flour

You could try using cassava flour in place of coconut flour. For the apple cider vinegar it should be replaced with something acidic like lemon juice, this will cause the baking soda to react and the cake to rise.

I made this yesterday for the first time and have made 4 so far! Love it! I added chocolate chips and cooked it in a small glass bowl instead of a mug, when I used a mug, it overflowed!

Hi I was wondering if I could use 1 tsp of white granulated sugar instead of honey and 1/4 cup of regular all purpose flour for the 2 kinds of flour? Thank you!
Hi Ashley, that definitely won’t be a problem switching the sugar for honey. With regard to the flour substitution I haven’t tried that myself but I believe that should work ok. Let me know how it goes!
Sounded great until the microwave part. Can’t be cooked in the oven?
Yes it definitely can, just make sure that the mug is oven safe. I would follow a similar baking time and temperature to a cupcake recipe.
