Ham and Cheese Puff Pastry Bundles
These Ham and Cheese Puff Pastry Bundles are the perfect thing to serve for brunch or as an easy appetizer. They are quick and easy to assemble with thinly sliced ham, Gruyere cheese, and a delicious honey mustard spread, all wrapped in flaky pastry.
Puff pastry has quickly become one of my favorite things to use when I want to impress. I have rolls of it in my freezer that I can bring out to make something savory or sweet in under 30 minutes.These Ham & Cheese Puff Pastry Bundles are like a fancy version of a ham and cheese croissant. I really think what elevates these ham and cheese puff pastries is the thin layer of honey mustard which gives the bundles a wonderful sweet and spicy kick, and the everything bagel season which adds a wonderful salty texture to the outside. These are great to serve for breakfast or brunch, or enjoy as a light lunch with salad and they are super versatile so you can swap out the type of cheese, add veggies or use a different type of deli meat. I was also excited to discover that you can get gluten free puff pastry in store so these can easily be made gluten free too!

Ingredients You Will Need
- Puff Pastry Sheets: You can find puff pastry dough in the freezer section and will want to thaw them beforehand.
- Sliced Ham: Thinly sliced black forest ham or honey ham are the best choices for this. Leftover ham won’t work because the pastry is too delicate, you need very thin slices of ham.
- Gruyere Cheese: I recommend grating the cheese for ultimate meltiness. You can also use Swiss cheese or white cheddar.
- Dijon Mustard: Mustard gives a delicious umami flavor and melds beautifully with the bold cheese and the salty ham.
- Honey: The sweetness of the honey is necessary to bring all the flavors together for a sweet and salty blend.
- Egg Wash: One egg and a splash of whole milk whisked together are all you need to give a beautiful, golden shine.
- Everything But the Bagel Seasoning: This is an optional topping, but it gives an excellent burst of flavor in every bite.

How to Make These Ham and Gruyere Puff Pastry Bundles
- Preheat the oven and line a sheet pan with parchment paper. In a small bowl, whisk the egg wash.
- Gently roll the sheet of puff pastry out on a floured surface using a rolling pin. Cut into squares and transfer the squares to a prepared baking sheet.
- In a small bowl, stir together the mustard and honey and brush it on the puff pastry squares.
- Fold a slice of ham in half, place it vertically across each square, and then top with grated cheese. Repeat with the remaining squares.
- To assemble, lift one corner of the puff pastry rectangle and place it over the ham and cheese. Brush a bit of the egg wash on top of the puff pastry, then pull the opposite corner and put it on top to seal.
- Generously brush the edges of the pastry squares with the egg wash, and then liberally season with the bagel seasoning.
- Transfer to the oven to bake until golden brown in color. Allow to cool before serving with additional sauce on the side or drizzle on top.

How To Modify
- You could use sesame seeds instead of the Everything but the Bagel Seasoning.
- Try your favorite cheese, like Swiss cheese, Edam, White Cheddar, or Mozzarella cheese.
- You can absolutely use spicy mustard, grain mustard, or honey mustard.
- Adding your favorite vegetables would be delicious, but the pastry is delicate, so be careful. I recommend caramelized onions, a few spears of asparagus, fresh spinach, a couple thins slices of tomato, or thinly sliced mushrooms that have been sauteed in a bit of butter.
Dietary Customizations
- Make these gluten-free with a gluten-free puff pastry. Schar makes one, and it’s amazing!
- To make this dairy-free, use your favorite type of dairy-free cheese and non-dairy milk.
- Make these vegetarian by swapping the ham for asparagus or roughly chopped cooked broccoli florets.
Advanced Prep and Storing Leftovers
- Whether making these in advance or storing your leftovers, these will last 3-4 days in the fridge when stored in an airtight container. You can also store them in the freezer for 2 months.
- Be sure to bring them to room temperature before storing for next time.
- Wrap them individually in plastic wrap for a quick breakfast on the go to warm in the microwave.
- To reheat in the oven, preheat it to 375 degrees F and warm for 10-15 minutes.

Ham and Cheese Puff Pastry Bundles
Ingredients
- 2 frozen puff pastry sheets - thawed
- 8-10 slices of thinly sliced ham black forest or honey ham
- 8 oz gruyere cheese grated
- 2 tbsp dijon mustard
- 2 tbsp honey
- 1 egg
- 1 tbsp whole milk
- 1 tbsp everything bagel seasoning
Instructions
- Preheat the oven to 375 degrees fahrenheit and line a sheet pan with parchment paper
- In a small bowl whisk together the egg and milk.
- On a floured surface, gently roll the puff pastry sheets out using a rolling pin. Cut into squares approximately 4 ¼ inches in size. Transfer the squares to the sheet pan.
- In a small bowl stir together the dijon mustard and honey. Generously brush the puff pastry squares with the honey mustard.
- Fold a slice of ham in half and place it vertically across each square and then top with 1-2 tbsp of grated gruyere. Repeat with the remaining squares.
- To assemble, lift one corner of the puff pastry rectangle and place it over the ham and cheese. Brush a bit of the egg wash on top of the puff pastry and then pull the opposite corner of the puff pastry and place it on top of the other piece to seal. Repeat with the other squares
- Generously brush the outside of the squares with the egg wash and then liberally season with everything bagel seasoning
- Transfer to the oven to bake for 20-25 minutes until golden brown in color. Allow to cool before serving with additional honey mustard sauce on the side to drizzle overtop if desired.
