Parmesan & Truffle Fries
Truffle fries are a fancy spin on traditional french fries that you can often find on restaurant menus, but it turns out they are incredibly easy to make in the comfort of your own home. They’re salty, savory, full of umami flare and purely addictive.
I have zero self control when I see truffle fries on the menu at a restaurant and have to order them, every single time. It’s amazing how a little drizzle of truffle oil can completely transform a plate of fries. It turns out that all you need is grated parmesan and truffle oil to elevate your fries from boring to fancy. For this parmesan truffle fries recipe I have included my favorite method for cooking oven fries, but you can easily use frozen french fries, or cook them in the air fryer if you prefer. With my oven method the golden brown fries are crispy on the outside and soft and tender on the inside. Think outside the box when it comes to serving these. They are perfect as a side dish, but would also be amazing to serve on game day or when you have a small party at home. While you can enjoy them on their own, I love serving them with truffle mayonnaise to really up the truffle flavor.

Ingredients You Need For These Truffle Fries
- Potatoes: I personally think that russet potatoes are the best type of potato for oven fries, but you can use Yukon Gold potatoes or Red Potatoes if you prefer. Just be sure to cut the potatoes into equal sized long and thin strips.
- Olive Oil: I love to toss the potatoes in olive oil as a neutral oil that will go well with the truffle oil later on. You can also use avocado oil or an organic vegetable oil too.
- Seasonings: Sea salt, black pepper, and garlic powder make a simple seasoning combo that complements the truffle oil and parmesan really well. You can use white pepper if you prefer a mild flavor, and add onion powder for extra flavor.
- Truffle Oil: I like to use white truffle oil because it has a sweet and mild flavor, but black truffle oil will work too. Black truffles have a more robust and intense truffle flavor. When choosing a truffle oil I find that the best truffle oil is made with olive oil rather than extra virgin olive oil which has a more intense flavor that can often times overpower the taste of truffle.
- Parmesan Cheese: I recommend using fresh grated parmesan cheese for this recipe for an incredible umami zing that compliments the truffle oil perfectly. It’s like they were meant to be together.
- Fresh Parsley: I like the mild flavor of parsley with these fries, in the world of fresh herbs, it really is the superior herb to use on these homemade french fries. And I love the color pop it gives too!

- Large Mixing Bowl
- Wooden Spoon

How To Make These Truffle Fries
- Place the sheet pan in the oven to heat up as the oven preheats.
- Cut the potatoes into thin fries and place all of the sliced potatoes in a bowl and fill with hot water. Leave to rest for 30 minutes.
- Drain the fries, and dry them as much as possible between a clean kitchen towel or paper towel. Place the fries in a dry bowl, add 1 tbsp oil, salt, pepper, garlic powder, and toss to coat well.
- Drizzle the hot sheet pan with olive oil and then add the fries, ensuring they are well spread out in a single layer. You can add parchment paper if you want an easy clean up.
- Put the sheet pan in the oven and leave the fries to cook for 18-20 minutes.
- Once the fries are tender, remove the sheet pan from the oven and flip the fries over using a spatula. Turn the oven to broil and return the fries to the oven to cook for a few more minutes until golden.
- Transfer the crispy french fries to a bowl, drizzle truffle oil overtop along with parmesan cheese and toss to ensure they are all coated in the oil. Transfer to a serving bowl or plate and garnish with the additional parmesan and chopped parsley.
Ways To Modify These Easy Truffle Fries
- Exchange the salt for truffle salt for an added burst of umami flavor.
- You can use sweet potatoes if you want an incredible truffle sweet potato recipe.
- Use a neutral oil like sunflower or safflower oil instead of olive or even canola oil.
- Add more spices like onion powder, paprika, or cayenne pepper for an added kick.
- If you want to swap the cheese, you could use freshly grated pecorino romano or grated sheep cheese to grate overtop of the truffle french fries before serving.
Tips For Crispier French Fries
- Make sure they are all even sized: when cutting the fries, try to make sure that you cut the fries in even sized strips. This will help to ensure that they all cook evenly. I prefer cutting the fries quite thinly for maximum crispiness.
- Soak the Fries: soaking the fries in water helps to remove the excess starch and will result in a crispier fry. While some recipes call for the fries to be soaked in a large bowl of cold water, I have found that soaking them in hot water gives similar results but the hot water also helps to cook the fries as they soak, which results in a shorter cook time in the oven.
- Dry the fries: for the best results be sure to remove as much excess moisture as possible from the potatoes for crispy fries. If there is excess water left on the fries, it will cause them to steam when cooking and become mushy.
- Use a large sheet pan: use a sheet pan large enough for the fries to lie flat in a single layer. If you do not have a large enough sheet pan I recommend working in two batches, or separating the fries between two sheet pans. This will ensure the fries become crispy rather than steam and become mushy when baking.
- Preheat the sheet pan: Place the sheet pan in the oven while it preheats. Adding the fries to a hot sheet pan will help them sear on the underside and reduce the cook time
- Finish with broil: this is the best way to ensure that your fries are golden brown in color.
Dietary Customizations
- Leave out the parmesan cheese or use dairy-free parmesan if you are dairy free
- If you have a garlic allergy, you can leave it out.
Can I Make These Truffle Fries In The Air Fryer
Yes, air fryer truffle fries will be crispy and fresh and delicious! Although, depending on the size of your air fryer, you may need to cook the fries in single-layer batches so they don’t overlap. Simply prepare the potatoes as directed on the recipe card and when they’re ready to fry, preheat the air fryer to 375 degrees for 3-5 minutes. Lay in the air fryer basket and cook for 15-20 minutes, shaking halfway through. Transfer the air fryer fries to a large bowl, drizzle with a little truffle oil and top with parmesan, and parsley, and enjoy!
Can I Make These Truffle Fries in Advance?
Yes, you can make these in advance to be enjoyed for multiple meals, although truffle french fries are best enjoyed fresh so they are nice and crispy. You can do some prep work before though. To start, you can slice and par-cook the fries a day or two in advance and then allow them to cool to room temperature before storing them in an airtight container. You can mix the seasonings together and make the truffle mayo sauce 2 days in advance, and also, store it in a separate airtight container. When you’re ready to serve them, mix them with the seasoning and continue cooking according to the directions on the recipe card below. Alternatively, you can make them according to the directions, store them in an airtight container in the fridge, and when you’re ready to serve, re-crisp them in an air fryer or under the broiler until warm and crispy again.
What About Leftovers
Leftover truffle fries will typically last 1-2 days in the refrigerator. Cool them down to room temperature before storing them in an airtight container. Truffle french fries can lose their crispiness when stored, but you can try to restore some texture by reheating them. Using the oven, preheat to 375 degrees F and bake the fries on a baking sheet for 10-15 minutes, flipping them halfway through, or put them under the broiler for about 5 minutes. In the air fryer, set it to around 350 degrees Fahrenheit and reheat for 5-7 minutes to get them crispy again.

Parmesan and Truffle Fries
Ingredients
- 1 lb russet potatoes
- 2 tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 1/2 tsp garlic powder
- 2 tsp truffle oil
- 2 tbsp finely grated parmesan cheese
- 2 tsp chopped parsley
Instructions
- Preheat the oven to 425 degrees Fahrenheit and place the sheet pan in the oven to heat up as the oven preheats.
- Cut the potatoes into thin fries (approximately ¼ inch in thickness). Place all of the sliced potatoes in a bowl and fill with hot water. Leave to rest for 30 minutes.
- Drain the fries and then place them in a dish towel and completely dry them so there is no moisture.
- Place the fries in a dry bowl and add in 1 tbsp oil, salt, pepper, and garlic powder and toss to ensure all of the fries are well coated.
- Remove the hot sheet pan from the oven and drizzle with 1 tbsp of olive oil, and then add the fries, ensuring they are well spread out and not overlapping.
- Put the sheet pan in the oven and leave the fries to cook for 18-20 minutes (keep an eye on them to ensure they aren’t burning).
- Once the fries are tender, remove the sheet pan from the oven and flip the fries over using a spatula. Turn the oven to broil and return the fries to the oven to cook for a few more minutes until golden.
