These Air-Fried Gnocchi are so unbelievably addictive that you won't be able to eat just one. These little potato dumplings are tossed in extra virgin olive oil and a delicious blend of spices and air-fried to be golden brown and crispy on the outside with a pillowy soft interior.
Preheat the air fryer to 400 degrees Fahrenheit for 5 minutes
In a bowl add the gnocchi and drizzle in olive oil and then add in the salt, pepper, garlic powder and oregano. Toss to ensure all of the gnocchi are well coated in the seasoning before adding in the arrowroot powder and parmesan and tossing to ensure they are all well coated.
Add the gnocchi to the air fryer ensuring that they are all spread out evenly. Cook the gnocchi for 12-15 minutes, opening and gently shaking the gnocchi half way through cooking. The gnocchi is done when its crunchy on the outside and golden brown in color.
Serve with jarred tomato sauce and parmesan garlic sauce. Garnish with additional grated parmesan and chopped parsley
