1/2cupwhole milk or cream(or unsweetened almond milk)
Instructions
Cut the chicken breasts in half (Butterflied) so that you have two thin pieces.
On a plate stir together the arrow root powder, salt, pepper, garlic powder, onion powder and paprika. Dredge the chicken in the mixture so that they are well coated on all sides. Reserve 1 teaspoon of the arrowroot powder for the sauce. .
Heat the oil in a large skillet on medium high heat. Add the chicken breasts and cook for 3-4 minutes and then flip and cook an additional 4 minutes, the chicken should be golden brown in color. Set the chicken aside on a plate.
Add the butter to the pan along with the onions and leave to cook on medium low heat for 8-10 minutes until the onions have softened and turned golden in color. Add the 1 cup chicken stock and Worcestershire sauce to the pan and stir, bring to a gentle simmer and leave to cook for 5 minutes before adding in the ½ cup milk/cream and simmering for another 2 minutes.
In a small bowl whisk together the 1 tsp reserved arrowroot and ¼ cup chicken stock. Once well mixed so there are no clumps, pour it into the pan, stirring as you add it. Leave the sauce to simmer for 3-4 more minutes until it has thickened.
Return the chicken breasts to the pan and spoon the onion sauce overtop. Garnish with fresh parsley.
