Ingredients
1poundcherry tomatoesa combination colors cut in half width wise
½cupvery thinly sliced red onion and then cut in half into 1 inch pieces
1cupfresh basil
⅓cupolive oil
¼cupbalsamic vinegar
1tsphoney
1tspmaldon salt
1tspblack pepper
1tspdried oregano
2peaches
1large burrata
1tbspchopped chives
Instructions
In a bowl add the red onions, tomatoes and basil. In a small bowl whisk together the olive oil, balsamic, honey, salt, pepper and oregano. Pour the sauce over the tomato and onion mixture, stir to ensure everything is well coated. Cover and leave to marinate at room temperature for 1 hour.
Slice the peaches into thin wedges. Add the peach slices to the bowl with the tomatoes and stir to ensure they are coated in the sauce. Arrange the tomato and peaches on a platter. Break the burrata into 4-5 chunks and arrange them on the platter before sprinkling with chopped chives and basil
